Moist courgette cake

Instead of a savoury dish, I decided to make a chocolate-courgette cake, which doesn’t really sound as appealing as a chocolate and zucchini cake would - but here goes...
This is a moist fudgy cake that is not overly sweet. It would be really, really good with some vanilla ice-cream.
If you do decide to make this, please, please be sure that the centre of the cake is cooked through; you do not want to cut it open and see the middle seeping with raw gloop.
Chocolate courgette cake
110g margarine or butter
220g golden caster sugar
3 medium eggs
120ml sour cream
1 teaspoon of vanilla
340g plain flour
2 teaspoon baking powder
4 tablespoons cocoa powder
½ teaspoon ground all spice
400g- 450g courgettes, grated
Method,
Cream the butter and sugar together until light and fluffy, and then gradually beat in the eggs. Add sour cream and vanilla and mix well. Sift the flour, baking powder, cocoa and allspice into the bowl and gently blend dry ingredients into he creamed mixture. It will look dry but don’t worry, add the grated courgettes and blend well. Spread the batter evenly into a greased cake tin. Bake on gas mark 5 for 1 hour to 1 hour 15 minutes until he cake is firm and a toothpick inserted in the centre comes our clean. Cut into squares while still warm.

    You.Seriously.Do.Not.Mean.There.Is.Courgette.In.The.Cake. No way. (I actually had to Google 'courgette' to be sure of what it is). I can't imagine courgettes in a cake! No way! But... then again, I couldn't imagine liking carrot cake, and now I'm mad about it... (my head's still spinning on the idea of courgettes+cake).

    It really works, try it. You don't notice the flavour as it adds moisture mostly and maybe colour.

  18. Just thought I should reply. Yup I'm okay, I just had to catch up on some freelance translating job, and now I feel a bit dizzy and I think I'll go to bed. Actually I guess I am a little worried about still being jobless, and I know you understand. But still, there are so many other things that i do have in my life that I'm so thankful for, and I know the same goes for you too right? And you should know that reading your blog (when I have time to do it, like now!) is always a lovely spot of sunshine in my day. Or night. Hehe. When I started reading your blog (which was sometime in May this year I think?), I think you had around 600 followers? Or less? Now you have over 900! I'm really happy for you.     I'm sorry to read that unemployment is getting to you too, i am pleased that you do seem to have other distractiosn that keep your skills in use/up-to-date though. Its really miserable not having anything to do :(

    I am warmed that you feel that my blog offers a spot of sunshine in your day - sometimes I worry my situation seeps though and I sadden genuine well wishers like yourself.

    Yeah the followers has been increasing. Would you believe when I first started blogging. I hardly had any comments or followers for like 8 months, then it took off. I think visiting other peoples blogs has helped. Its funny though, a lot of the people that used to comment on my blog in the early days, now no longer come by my blog. I wonder sometimes, if the fact that I have gained lots followers and they have not has had something to do with it. Unlike some of them I blog post almost everyday. Its saddens me if that is the case, it saddens me too that they don't come by anymore or have unfollowed, but that is their choice. I can't help what is going on in their head. I have to enjoy my blog space, right ?!.
