Moist courgette cake

Instead of a savoury dish, I decided to make a chocolate-courgette cake, which doesn’t really sound as appealing as a chocolate and zucchini cake would - but here goes...
This is a moist fudgy cake that is not overly sweet. It would be really, really good with some vanilla ice-cream.
If you do decide to make this, please, please be sure that the centre of the cake is cooked through; you do not want to cut it open and see the middle seeping with raw gloop.
Chocolate courgette cake
110g margarine or butter
220g golden caster sugar
3 medium eggs
120ml sour cream
1 teaspoon of vanilla
340g plain flour
2 teaspoon baking powder
4 tablespoons cocoa powder
½ teaspoon ground all spice
400g- 450g courgettes, grated
Cream the butter and sugar together until light and fluffy, and then gradually beat in the eggs. Add sour cream and vanilla and mix well. Sift the flour, baking powder, cocoa and allspice into the bowl and gently blend dry ingredients into he creamed mixture. It will look dry but don’t worry, add the grated courgettes and blend well. Spread the batter evenly into a greased cake tin. Bake on gas mark 5 for 1 hour to 1 hour 15 minutes until he cake is firm and a toothpick inserted in the centre comes our clean. Cut into squares while still warm.

  1. I made a vegan courgette cake last year and it was scrummy.

  2. I love courgette in cakes, pity is, neither my husband nor my mom are fans of it, so I won´t make it just for myself and she won t make it for me to have a piece :-)

  3. Fab! It's courgette glut time again, and I'm always looking for good courgette recipes.

  4. Kella,
I've had vegan courgette cake in the past and I totally agree - Scrummy!

    Hey there fishywishy1,
Sorry to hear that some of your loved ones are not a fan of the courgette cake. If I could have, I would have happily shared some of this cake with you!

    Hello Scarlett,
Thank you. I do hope you try some of these recipes.

  5. Thanks for the visit to our humble blog. Zucchini chocolate cake is one of my favourite ckaes - so moist and who would ever know there's a vegetable in it?

  6. Your so welcome Giz.

I am looking forward to participating in the next PPN which you are hosting.

  7. Looks yummy! I have that problem with vegan cooking when i change a recipe, it always seems to be uncooked in the middle.

  8. This looks delicious. I love the idea of the chocolate.

  9. Thanks Rose.

    Thank you Michele.

  10. Yet another great recipe from my favourite food blogger. Love it.

  11. Thank you for such a lovely compliment RWYG.

  12. Now, I'm not sure which to bake - the courgette cake or the courgette brownies, both sound really good.

  13. Chocolette,
I'd strongly recommend this one. The courgette brownies were okay, but not one I'd boast about too much.

  14. MangoCheeks, I made this today as we had a friend for supper and it was really good. Had it warm with ice-cream - yum. Thanks for recipe.

  15. Oh Choclette,
I'm so pleased. It does make a huge cake.Good for sharing.

  16. Hello Shaheen... I hope you won't mind all these comments I'm leaving tonight (it's 1.51 a.m. here now!!!) but I can't seem to get to sleep so I'm having fun browsing through your blog.

You.Seriously.Do.Not.Mean.There.Is.Courgette.In.The.Cake. No way. (I actually had to Google 'courgette' to be sure of what it is). I can't imagine courgettes in a cake! No way! But... then again, I couldn't imagine liking carrot cake, and now I'm mad about it... (my head's still spinning on the idea of courgettes+cake).

  17. Of course I don't mind Sumaiyyah.
I just think its funny that your still awake - are you okay? Sometimes life worries keeps us up.

Yeph this Seriously.Does.HAVE.Courgette.In.The.Cake. No way also known as zucchini.

It really works, try it. You don't notice the flavour as it adds moisture mostly and maybe colour.

  18. Just thought I should reply. Yup I'm okay, I just had to catch up on some freelance translating job, and now I feel a bit dizzy and I think I'll go to bed. Actually I guess I am a little worried about still being jobless, and I know you understand. But still, there are so many other things that i do have in my life that I'm so thankful for, and I know the same goes for you too right? And you should know that reading your blog (when I have time to do it, like now!) is always a lovely spot of sunshine in my day. Or night. Hehe. When I started reading your blog (which was sometime in May this year I think?), I think you had around 600 followers? Or less? Now you have over 900! I'm really happy for you. Okay I think I really should go now. My head is spinning. I've a big baking project planned for tomorrow. Take care, dear Shaheen! I hope your life spins out beautifully for you!

p.s. You probably needn't post this comment. Too much rambling. I'd be embarrassed :P

  19. Hi Sumaiyyah.
    Thanks for sharing. x
I'm sorry to read that unemployment is getting to you too, i am pleased that you do seem to have other distractiosn that keep your skills in use/up-to-date though. Its really miserable not having anything to do :(

I am warmed that you feel that my blog offers a spot of sunshine in your day - sometimes I worry my situation seeps though and I sadden genuine well wishers like yourself.

Yeah the followers has been increasing. Would you believe when I first started blogging. I hardly had any comments or followers for like 8 months, then it took off. I think visiting other peoples blogs has helped. Its funny though, a lot of the people that used to comment on my blog in the early days, now no longer come by my blog. I wonder sometimes, if the fact that I have gained lots followers and they have not has had something to do with it. Unlike some of them I blog post almost everyday. Its saddens me if that is the case, it saddens me too that they don't come by anymore or have unfollowed, but that is their choice. I can't help what is going on in their head. I have to enjoy my blog space, right ?!.

Enjoy your sleep and your Baking project tomorrow. I wish you a happy future too and wish that things fall into place for you too :P
PS I think your comment is warm, so I hope you have not minded me posting it, but if you want, you can delete it - I won't mind x
