Rocket and sun-blush vegetarian 'sausage' rolls

I am too tired to do some cooking from scratch, so it was one of those lets see what is in the fridge to use up.
D had picked up a packet of vegetarian 'sausages' on Friday for our weekend brunch, but we didn’t get round to eating them. There was also some limp looking rocket, half a tub of sun-blushed tomatoes and a packet of ready rolled puff pastry.

So like an episode of Ready Steady Cook, this is what I did within 30 minutes.
I made some plain looking vegetarian sausages, taste like some very good sausage rolls.
These were accompanied with some oven chips. So you can imagine how full we are right now.

  3. Mmmm - those look lovely, Mango. And oven chips! One of my guilty pleasures.
Didn't comment on your previous post, but I've taken note of that stew. btw if you're ever in Washington DC, you MUST go to the canteen of the American Indian museum: I had a wonderful lunch there last month. Best meal on the mall!

  4. Funnily enough I was just looking at some quorn mini sausages the other day and wondering if I could add some extra flavourings and make sausage rolls with them. Now you've demonstrated proof of principle I think I'll give it a go!

  6. They look delicious mangocheeks. I have a real weakness for sausage rolls. Your post on Polenta chips was a light bulb moment for me too. I cook polenta often but never thought of chips.
Oh and by the way, have you decided to carry on with the allotment or not? I do hope so :0)

  8. Thank you Sarah and Michal.

Thanks Kella. The only reason I would hesitate to freeze them is the rocket, but baby spinach would be good.

    Thank you Sophie.

    Thanks Fran :D
Thanks for sharing the American Indian Museum as place to eat, should I ever visit Washington DC!

    Thanks FastestIndian.
Funny you should mention quorn mini sausages, I am sure that is the purpose of them.

    Thanks Moy,
The sunblush tomatoes mixed with rocket def. added a flavour of sunshine to my table. Well it made me feel 'good' anyway :D

    Thanks Dee.
I hope you enjoy the Polenta chips when you get round to making them.

In relation to the allotment, I have given up on that site, but will look into other sites in the future when I am ready. For now though, I am going to focus on my tiny garden plot and grow some veg in pots. Thank you for asking.

    Thanks Jo.
The tomatoes def. added extra flavour and moistness.
