A bit like the Carrot 'Cake'; Lavender Scented and the Beetroot and Chocolate Waffles before that, these 'Courgette and Chocolate Waffles' were an experiment yesterday morning.
2 eggs, beaten
350ml/1½ cups milk
60ml/1/4 cup vegetable oil
1 small courgette or 1/2 cup of cup courgettes, grated
1 teaspoon vanilla extract
250g/2 cups plain flour
1 teaspoon baking powder
½ teaspoon bicarbonate of soda
2 - 4 tablespoons of fairtrade cocoa powder depending on how chocolaty you want it to be.
Pinch of salt
In a bowl, mix the wet ingredients together. In another bowl, stir together the dry ingredients. Pour the wet ingredients into the dry and combine well. Add more milk if necessary. Cook according to your waffle maker instructions. Adapted from this recipe.
