Green Spirulina Coconut Macaroons

Have you noted my absence?!  I haven't had Internet since Friday thanks to BT, until this evening when I got in from work.  
I made these vegan coconut macaroons at the weekend.  With St Patricks day nearing us, I decided to add a teaspoon of spirulina to half of the mixture.



Although they turned out looking good and held well, they lacked sweetness.
Of course, you could make these with matcha too.  

I promise to share the recipe in not too long, just need a little more tweaking before I am happy with it.

  2. Oh my word. These type of macaroons are my ultimate favourite treat! Green ones look slightly spooky but I bet they taste great x

    1. Thanks Dom. Yes, may have to make the green ones for Halloween, but tomorrow its St Patricks Day, so will work well there too.

  4. Spirulina is good in our morning fruit smoothie too...green for go! I quite like the less sweetness of it

  5. The macaroons look delicious. Yum! The boys and I are making green mint chocolate chip cookies tomorrow to celebrate St. Patrick's Day. And, speaking of macaroons, I will be making some for Passover. They are a favorite of the husbands. :)

    1. Thanks Krys. Yum, I will swing on over. I've made a Green Quyiche to share tomorrow, though not vegan with sprirulina shortcrust pastry and green broccoli filling. Hope you husband appreciated his macaroons when you make them, will you make them green too? :)

  6. Welcome back - no internet is always frustrating (although perhaps also a break if you could switch off from the frustration). The green colour in these spirulina macaroons is impressive. Could you taste the spirulina?

    1. Thank you Kari. I didnt mind the blogging break, just was unable to check my e mails and my husband was more frustrated with BT constant lack of efficiency, nothing has been straightforward with them ever.

      To answer you question, yes you could def. taste the spirulina, so a little is enough, but its not terrible - just an acquired taste.
