Eat Your Greens Round up #10

It that time again, the Round Up for 'Eat Your Greens' #10.    
This is a monthly vegetarian and vegan cooking challenge for food bloggers to make something with a green vegetable (or fruit) each month.  
We kick of with an entry by Teresa who blogs at Mastering The Art of French Cooking: The Vegan Version.  Teresa shares with us some vegan Spinach Pancakes served with some scrambled tofu 'eggs'.
Next we have  a number of dishes that have favoured the same green vegetable - the awesome kale.  First we have The Veg Hog with Irish Colcannan to celebrate St Patrick's day last month. As well as kale, these Colcannan cakes contain leeks too..

Johanna from Green Gourmet Giraffe.  In her bowl of Tomato Soup we also find Kale and Pistachios for bite.   This soup also has plenty of flavour from paprika and oregano and pumpkins for body an bite. 
Janet from the Taste Spaces also opted for kale in her Sesame-Sriarcha Roasted Vegetable Chickpea Bowl. This is a very colourful dish and one to bring a smile to your face and warmth to your belly.  
Linsey from Home Cook Food shares with us a plate of Baby Bok Choy with Tofu in Sweet and Sour Sauce.  This stir fry also includes the leggy asparagus.  It looks very very healthy. Linsey also shares a glass of Wheatgrass Juice.  
And finally Jen from Chardonnay & Samphire.  Jen shared with us a aromatic, salt and summery Courgette, Olive and Mint Quinoa Pilaf.   Jen writes that 'This dish can easily be vegan, just omit the feta'.

  2. Love this roundup- thanks for sharing :) I think the green pancakes look my favourite. Today I made bubble and squeak using Spring greens and a green juice from home grown kale, some kiwis and a pineapple; Spring has sprung!
