Guacamole Spaghetti

I made this Guacamole Spaghetti Pasta not that long ago, when we came in from work wanting something relatively quick and easy to eat. 

I have made pasta with avocado in the past and enjoyed it such a Jalapenos, Coriander and Avocado Pasta Salad  and Avocado Coriander Chilli Spaghetti, so thought why not try this combination.
Even though we cleaned the plate mostly out of hunger, I have to confess that I found eating the Guacamole Spaghetti pasta a bit weird.  I think I will in future reserve guacamole for my tortilla chips rather than for coating pasta.
The recipe for this Guacamole Pasta sauce also is not the way I make guacamole.  This was a lot more sloppy because of the tomato juices flowing from the quantity of fresh tomatoes.
Something I had not thought about before is my preference for avocado.  

Oh my goodness can someone have a preference for avocado type.?  I hear you shout.    Yes I do and so does the Zimbabwean man who was standing next to me picking some avocado advising me to pick the prickly ones.  I now have discovered that I prefer Hass avocado as opposed to the smoother skinned ones. I will tell you why maybe some other time.

  1. I like your honesty! I use avocados in spaghetti sauces, usually in chunks and flavoured with a good soy sauce. It's a quick easy meal. Usually add nutritional yeast flakes too, plus some seasonal veg. Hass every time, the thin skinned variety can be quite watery.

    Nigella does a wonderful marmite dressing for spaghetti which is to die for.

    1. Thanks Ray, I have had other avocado salads in the past that i have enjoyed, just not so much this version. So pleased to note you agree with me in relation to avocado variations. I will have to check out Nigella's marmite dressing, I do like marmite.

  3. I've tried avocado pasta before and I think I agree with you - I like avos, I like pasta, but I don't necessarily think I like them well enough together. I love all the ingredients though - maybe I just haven't found the right avocado type?!

      Yes I do agree with you, i like avocado quite chunky to eat as well, but I made an avocado soup (on my blog) and loved it.

  4. You know, I am embarrassed to admit that I didn't realise there were different avocado types. I know the name Hass and just thought they were all Hass, although if I stop and think I realise that makes no sense. I will have to pay more attention!

    I too find avocado-based pasta sauces a little unusual, so I am glad it isn't just me. Nonetheless, this does look like a tasty and hearty meal.

      So pleased to note I am not alone in my feelings towards avo based sauces, but I think i am just finicky as I did like an avo soup (blogged)

  5. I have only had avocado sauce on pasta once and enjoyed it but was hopeful this might be a good way to try it - now I would love to try a mexican lasagne with some guac - so you haven't quite deterred me :-)

    1. I have had avo sauce on pasta and not minded it, but this was not creamy in the same way. You have me intrigued with the Mexican lasagne idea, so will look out for its appearance on your blog one-day.
