Vegetarian Scotch Egg

I've mentioned before that my darling husband gets excited when I speculate that I may make some vegetarian Scotch eggs. 

Well there are no plans to make some this Easter weekend, I am just taking the opportunity to share some that I made some time last year, but never got round to sharing.
I think the reason I never shared these was because I never got round to taking a photograph of them when they had been deep fried and served.  

Still here they are...ready to get their golden colouring and crisp coating.

    1. Thank you. Making th emost of the sunshine. Been out in the garden, digging and getting some plants in the ground, sowing some seeds in the greenhouse and weeding. Taking a little break. I hope you have a nice weekend too

  2. Thanks for including my chocolate scotch eggs - sadly they are the only ones I would try but I always love the look of scotch eggs - they are so enid blyton. And I know how annoying it is when you have a recipe but do not get the time or light to photograph it. I am curious about what sort of casing you used for the eggs instead of meat - was it like a nut roast sort of mixture?

    1. Your very welcome Johanna. The casing is for a sosmix that I have used in the past, see the link here. Its very old fashion way of making veg sausages at home, you may have an equivalent in Australia. Ihave in the past made it from mushrooms - if you check out my links, you will see the variations.
