Raspberry Crown cupcakes
I wanted to enjoy the freshness and natural flavours of the Autumn raspberries I picked earlier from Plot 11, but I also wanted something sweet - like chocolate, so I made a compromise.
Chocolate cupcakes lavishly smeared with raspberry jam and then crowned with fresh raspberries. I was so pleased with them, worthy of any regal party.

What a delicious treat! I love raspberry and chocolate together too. My raspberry plant has just started to grow wildly.

ReplyDeleteDid you put the raspberry plant straight into the ground? The fact that it is growing wild, is a very, very good sign, it needs to stretch. As the years go by, you will find it creeping left, right, forward and backward. I do hope it rewards you with good berries!

Yes, raspberry canes will go crazy. I noticed that at Plot 11, when they were starting to creep into my neighbours plot. You can try snipping some of the canes, but not too much, afterall we want juicy raspberries, not imposing canes.
Those are definitely regal cupcakes, Mango. I love raspberries and chocolate.

ReplyDeleteNo i didnt put the plant ground because our soil is like sand here (it use to be sand dunes many years ago) so its in a biggish pot. I may have to put it in an even bigger pot if it keeps growing like this.
