Broccoli and Red Pepper Tart

Quiches and Tarts are so popular in my home at the moment.

I make the pastry from scratch and then the filling is made up of whatever vegetable we have laying around in the kitchen that has to be used up; and saved from the compost bin.
This time round, it was Red Pepper, Broccoli with stalks and all.   It was actually quite nice and quite pretty to boot with its red, green and dare i say yellow gold colouring.  The sweetness from the red pepper complimented the broccoli. I served it alongside some left over orzo pasta that in a funny way, it felt more like a buffet dish.  The recipe is adapted from here if your interested in checking it out. 
I am looking forward to my weekend.  I've signed up to two different classes this weekend, both educational for personal development and interest.  It won't feel like a weekend off, as the weekend will entail lots of screen time, reading and listening.  I was thinking about taking Monday off as annual leave, but i have a one to one with my Line Manager that i cannot cancel. So it will be a long working week.  

Anyway, what plans do you have for the weekend?

  1. A good use of all the odds and ends of veggies!
    I have started a freezer box of all the trimmings that would go in the compost to make vegetable stock...an idea from Jack Monroe...save enough then cook them up!!

      My freezer is small, so no saving trimmings for me they all go to the compost bin, if we don't eat it.

  2. Besides my lentil soup, this is the third recipe I've seen today that is versatile enough you can add whatever is in the fridge or pantry. I should make quiches more often. (I just hate to make the crust.) Lovely colors!

    1. Yeah i w snever keen on making the crust, but easy with my magimix blender for the dough, then roll out by hand. Some part of it is easy. ps i think we are all being thrifty Debra with what veg we have to hand at home.

  3. Wow that sounds good and a little fancy - it looks really beautiful too. Not much pastry happening here - feels too much work!

    Am seeing my family in Geelong on the weekend - has been quite a while since I have been down so that will be nice - hope to get to the beach. Good luck with your educational sessions - hopefully they will be worth the zoom drain!

    1. Thank you Johanna. I was quite surprised at how pretty it turned out too - but that is in the eye of the beholder as others may look upon it and think - messy. Pleased to read that you are seeing family in Geelong. The weekend learning was excellent. i feel genuinely enlightened and something i can put into action too.

  6. Your colourful quiche looks fab. I’d enjoy taking a slice of that to the allotment for lunch!

    1. Thank you Belinda. It would be great allotment grub. Yeah, i am thinking of taking a little easy tomorrow afternoon after the LM. Its St David's Day so after lunch, i think most of my work colleagues will be chilling.
